- 1 small orange pepper
- 1/2 white onion
- 5 cloves garlic
- 1 tablespoon olive oil
- 6 thin slices of back bacon
- 5 extra-large eggs
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 3/4 teaspoon garlic powder
- 1/2 cup shredded cheddar cheese
Add diced orange pepper, diced onion, minced garlic, and olive oil to a frying pan. Cook for 7 minutes, or until onions start to become translucent. Set aside.
Thinly slice six pieces of back bacon. Take a large, greased muffin tin and press one slice of bacon into each cup.
Scoop the vegetable mixture into the bacon cups.
Lightly blend together the eggs, black pepper, salt, and garlic powder. Pour the egg mixture into the cups and sprinkle the cheddar cheese on top.
Bake at 350 degrees for 30 to 35 minutes.
